Sweet Quinoa pudding recipe - a modern take on life-long rice pudding

My mother has never been very good at preparing sweets, but she did master the art of homemade dessert with a trio of aces that continue to remind me of my childhood: Calatrava bread, custard, and rice pudding. Homey desserts where there are, typical of so many families, to which I now dare to try new versions such as sweet quinoa with milk. It is a reinvention of the dessert of a life-changing the base ingredient for quinoa, and the result has enchanted us.
In each house, they follow their own recipe for rice pudding and I would recommend trying each one to try to change the grain for this pseudo-cereal loaded with vegetable proteins. Many similar versions can be found online under the term pudding or as a porridge, and it can be done in a vegan version substituting milk for a vegetable drink. Quinoa, yes, requires a different treatment than rice, but the recipe is very simple and only needs a little pampering in cooking.

  •     Sugar 80 g

  1. First of all, you have to rinse the quinoa well in a strainer until the water stops running cloudy. Drain and arrange in a pot or saucepan, better if it has a thick bottom. Light the fire and let it dry for a few seconds, add the water, bring to a boil, lower the temperature and cook until the liquid evaporates.
  2. Incorporate the cinnamon stick, the lemon rind without a white part, and a pinch of salt. Add about 750 ml of milk, bring to a boil, stir and lower the heat. Begin cooking slowly, stirring continuously from time to time to avoid sticking to the bottom, for at least 45 minutes. Add the sugar after 40 minutes, stirring well.
  3. Watch the liquid level since you can ask for more milk depending on the type we have used, and the texture we like. The quinoa will be cooked after 20 minutes but we want it to reduce the liquid and leave a creamy, mellow texture, which will also thicken once cold. Also adjust the sugar point to taste and add the butter, if desired.
  4. Remove the cinnamon, making sure that there are no bits left off the branch, and the lemon. Distribute in bowls or small casseroles, wait for it to cool and store in the fridge. Serve with ground cinnamon or sugar on top, which can be burned to create a crust.

Quinoa is one of those superfoods that you hear more about every day, it begins to be present in a lot of dishes and although we are more used to seeing it in salty recipes I am sure that this idea of ?? a sweet quinoa recipe that I bring you today you are going to love it!
A few years ago we started to find quinoa regularly on supermarket shelves, I remember that when I first bought it in 2014, they had to order it from an organic supermarket and it had cost me an "eye-to-the-face ». Now they even sell us a lot of products that contain quinoa: cookies, snacks, yogurts ... although we have to be very careful since most of these products are processed that seem healthy but are not.
Among these "new products" a few months ago I found a dessert with quinoa that is somewhat similar to rice pudding but instead of rice using quinoa. The fact is that when turning the product to read the ingredients, the first ingredient present was sugar, and the amount of quinoa it contained was almost indifferent. That's why it occurred to me to share with you this sweet recipe with homemade quinoa, ideal for desserts, snacks or I include healthy breakfasts.
Quinoa is one of the most consumed grains for years in the Andes, technically a seed that belongs to the family of the Chenopodiaceae (such as spinach) but is compared to cereals for its composition and the way it is eaten.

What properties does quinoa have?

  •     Contains much more protein than most cereals
  •     It is rich in minerals such as iron, calcium and phosphorous, and in vitamins
  •     Does not contain gluten
  •     It is a source of fiber and polyunsaturated fats
There are several types of quinoa: red, white, and black. The one that is best known and consumed is white quinoa, also the one that has a milder flavor, ideal to use in this sweet recipe. To cook the quinoa you need three parts of water or broth for one part of the grain, you must wash it well under the tap and with the help of a strainer before cooking to remove the saponin it contains. Then it is placed in a pot with the liquid and cooked over low heat for 15-20 minutes. It is a very versatile ingredient that you can use for a lot of dishes, both sweet and savory: buddha bowls, veggie burgers, cold and warm salads, etc.

Ingredients

  • 150ml of water
  • 200ml of vegetable oat drink
  • 1 cinnamon stick

 How to make sweet quinoa with cinnamon

  1. Wash the quinoa under the tap and then let it soak for 20 minutes in water to soften it and cook before
  2. Remove the water with which we soak and place the quinoa in a pot. For each part of quinoa place 2 and a half of water, we can also cook the quinoa directly with the vegetable drink we choose
  3. Add the cinnamon stick
  4. Cook over medium heat for 20 minutes
  5. If in the process the quinoa absorbs all the liquid we can add more little by little
  6. Remove from the heat and let stand a few minutes
  7. When serving to add cinnamon powder and sweet syrup to our liking
