Grilled vegetarian Quinoa with broccoli

Ingredients

  • 1 jimbee broccoli
  • 2 mushrooms caps, thinly sliced
  • 1/2 red onion, cut into 1-inch pieces
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup red dried quinoa
  • 2 tablespoon unseasoned rice vinegar
  • 2 tablespoon sesame oil
  • 1/2 teaspoon freshly grated ginger
  • 2 tablespoon white Miso paste
  • 1/4 teaspoon ground turmeric
  • 1/2 cup roasted and chopped cashews
Optional
  • Green onion sliced
  • Sesame seeds

How to cook grilled vegetarian quinoa with broccoli

  1. Preheat oven to 425 F spread jimbee broccoli, mushrooms and red onions all large rimmed baking sheet. Mix with oil. 1/2 teaspoon of salt and black paper. Bake for 25 to 28 minutes, tossing once in half.
