Quinoa with pumpkins

Pumpkin and Chicken Quinoa Soup

For lovers of soup, a new proposal.
I combined the quinoa, pumpkin and chia that I love and also with the chicken breast complements the flavour. Delicious!

  • 100 gr cooked quinoa
  • 150 gr pumpkin
  • 1 clove garlic
  • 1 chive
  • 1 large chicken breast
  • 1 tablespoon chia seeds
  • Vegetable soup
  • pink salt
  • Virgin olive oil

Steps to make Pumpkin and Chicken Quinoa Soup

  1. To cook the quinoa: wash several times by immersing it in water, then cook 1 part of quinoa for 2 of salted water, 15 minutes. While the quinoa is cooking, chop the chives and garlic and fry in a saucepan with olive oil. When the onion begins to look transparent, add the pumpkin cut into small pieces. We leave a couple of minutes.
  2. Meanwhile, we cut the chicken breast into a size similar to the pumpkin and put with the vegetables, add a pinch of salt. When we have the chicken sealed, cover with the vegetable stock and cook. When

Quinoa with pumpkin and textured soy

Easy, healthy and rich recipe, as always !!

  • 100 grams approx of quinoa
  • 2 handfuls textured soy
  • 1 red onion
  • 1/2 pumpkin
  • Salt, pepper, garlic powder
  • Fresh parsley
  • Olive oil
  • Water (twice as much as quinoa)

Steps to make Quinoa with pumpkin and textured soy

  1. We prepare the ingredients. We leave the pumpkin chopped into small pieces, which is the most expensive
  2. I soak the textured soybeans in water. And I rinse the quinoa for a long time in plenty of water
  3. In a frying pan, fry the chopped red onion with a little bit of olive oil. When it sautés a little we add the pumpkin that we had chopped. And we let cook for a long time at medium-high temperature, stirring occasionally. When it is half done (that can be easily punctured soft) we add the quinoa that we had drained. We braise
  4. After a few seconds sautéing, add twice as much water as quinoa (in this case 200 ml approx). You can also add vegetable broth instead of water. Add the salt and spices and a little chopped fresh parsley. We also add textured soy. We let cook over medium-high heat until all the water reduces, we test the quinoa in case it needs more water and more cooking.
  5. We serve and eat! It was very good, but I recommend using better vegetable stock to give it more flavour (I didn't have to use water for that reason).

Quinoa with roasted pumpkin and beef

After these dates where we always go with the much stronger pecking and cyclical ... we want to start the year with a rich and healthy recipe .... easy to prepare, cheap and very complete !! We cook ?? 😘

  • 1 cup quinoa
  • 250 gr pumpkin
  • 200 gr minced beef
  • 1/2 large red pepper
  • 1/2 large yellow pepper
  • 2 garlic
  • 150 gr mushrooms
  • 1 splash balsamic vinegar
  • Goat cheese
  • Turmeric, 
  • Cinnamon, 
  • ginger powder, 
  • fresh coriander,
  •  salt, 
  • egg

Steps to make Quinoa with roasted pumpkin and beef

  1. We are going to start by roasting the pumpkin for 20-25 minutes in the oven at 180 ° until it is roasted
  2. Meanwhile, chop the peppers and fry them with aove and a pinch of salt.
  3. When they are beginning to brown, add the minced garlic and the mushrooms
  4. Once ready, add the minced meat and put the spices. I put a teaspoon of each, but be careful with Cinnamon and ginger, which are more peculiar flavours. Go putting little by little and rectify salt
  5. Once ready ... add the pumpkin and sauté a little with everything. Be careful not to fall apart. Just mix it well and keep a couple of minutes
  6. We cook the quinoa with double the amount of water that we have put and left 15 minutes until it is at its point. Do not forget to run it for a few seconds before the tap to clean it.
  7. Easy and super healthy !! We start the year in a healthy way !!

Quinoa and pumpkin dumplings with garden sauce

Satiety dish. A little work but it's worth it
  • 80 g. Quinoa
  • 1/2 onion
  • 150 g. Pumpkin
  • 1 egg
  • 2-3 tablespoons oatmeal


  • 1/2 onion
  • 1 carrot or pumpkin
  • 1 piece The white leek
  • 1 green pepper
  • 1/2 red pepper
  • Pinch flour
  • 1/2 glass white wine

Steps to make Quinoa and pumpkin dumplings with garden sauce

  1. Cook the previously washed quinoa, and reserve.
  2. Poach the onion and the grated pumpkin.
  3. And mix with the quinoa, add an egg and flaked oatmeal to form a paste. Let the dough settle well, if they are done the night before better. Then the meatballs are formed and lightly fried.
  1. In a frying pan fry the vegetables, when they are soft, add a pinch of flour, stir, the white wine until evaporating and the water. Salt and cook for half an hour. Crush the sauce and cook the meatballs in the sauce for a few minutes. Accompanied with pasta it is very rich.

Quinoa with chicken curry and pumpkin

I made this dish with the broth and chicken that I showed in the previous recipe, and I personally loved it

  1. Wash the quinoa well and cook it for about 15 minutes in the chicken broth made previously
  2. Add the chicken and pumpkin (already cooked) in a pan, add the quinoa and spices to taste and stir everything to integrate it well.
