In my house, they have always eaten quite simple and traditional salads, but since I started cooking I have liked to experiment and try new recipes. I had the quinoa salad pending because I had never prepared it nor had I tried it and I'm sure there will be a second time because it is delicious.
Quinoa is very easy to prepare, in fact, it looks like rice. Once it is cold (you can let it cool to room temperature or if you are in a hurry or you are as impatient as me, pour cold water on it) you can use your favorite ingredients and the dressing that you like the most. I have added: corn, carrots, cherry tomatoes, black olives, and avocado.
I have seasoned it with extra virgin olive oil, although it must also be very rich with lemon juice or balsamic vinegar.
If you don't like quinoa or you think it's very expensive, you can use rice. The ideal is to eat brown rice because it is healthier and more nutritious, although I also usually eat Basmati rice in my day today.
It is important to eat salads throughout the year and when it is cold there are people who find it difficult to do so, therefore, salads of legumes, rice or quinoa are a great alternative, although it is important to consume enough raw green leaves, they are full of nutrients, minerals, and fiber.

The salad is also delicious without any dressing and I have to try it with soy sauce because the truth is that I try to avoid the oil as much as possible. I have discovered that there are many very rich, light, and healthy dressings that we can use instead of the typical vinaigrette that almost everyone uses.

I find it more comfortable to use frozen corn because I have it in the freezer and cook it in boiling water at a time when I need it, in addition, canned corn usually has additives and is more processed.
To make the salad lighter, you can replace the olives with capers. Do not be afraid of the fat of the avocado, it is one of the healthiest you can consume and it is also delicious, although it should be taken in moderation.

Years ago, when I was not yet vegan, I went to eat with a friend at a well-known fast-food restaurant chain. I ordered a salad because it was on a diet and my friend ordered the typical menu with hamburgers and fries. Comparing the nutritional information I was disappointed, there was less than 100 calories difference between my salad and your menu!
Now I realize that it was made with unhealthy ingredients: Iceberg lettuce (it has a very poor nutritional value, the ideal is to consume other types of green leaves), chicken, cheese, croutons, and a hypercaloric sauce. I am telling you this because many people believe that any salad can be healthy or light, but it is not.
Do not add ingredients of animal origin, or highly refined or processed products and try to keep the ingredients fresh, as far as possible. Avoid canned sauces and don't overuse fats, especially unhealthy ones.

  •     1/2 cup uncooked quinoa (100 g)
  •     1/4 cup corn (35 g)
  •     1/4 cup of carrot (40 g)
  •     12 cherry tomatoes
  •     12 black olives
  •     1 avocado
  •     Extra virgin olive oil


  1.     Wash quinoa well before cooking to remove saponins (a bitter substance used to make soap).
  2.     Cook the quinoa following the package instructions. Let it cool or pour cold water on it.
  3.     In a bowl, add the quinoa and the rest of the ingredients. Dress with extra virgin olive oil to taste.

  •     2 cups of water

  •     2 Friko Chicken Breast Fillets
  •     2 garlic cloves, crushed

  •     1 purple cabbage in thin julienne strips
  •     1 avocado in large cubes
  •     1 cup sweet orange peels
  •     For the vinaigrette
  •     2 tablespoons chopped coriander
  •     1 red onion, finely chopped
  •     1/4 of Cup of lemon juice
  •     1/2 cup olive oil
  •     1/2 teaspoon salt

Steps to make friko chicken and salad recipe

  1.     We cook the quinoa with the same technique with which we make rice. We boil water 2 times the amount of quinoa that we are going to cook. Add the quinoa and salt, when the water evaporates, cover and lower the heat. We cook for 10 more minutes.
  2. Apart we cut the Friko Chicken Breast Fillets into julienne strips, season with the garlic, salt, pepper, and paprika.
  3. Sauté the chicken julienne strips with a little olive oil.
  4. TIP a quick way to make the vinaigrette is: add all the ingredients inside a jar with a lid, and shake until they are integrated. We reserve.
  5. Now we are ready to assemble the salad. We take the quinoa, the chicken julienne, and mix them together with the avocado, the purple cabbage, and the orange peel. We serve and top with the vinaigrette that we had prepared.

  •     100 gr peppermint

  1.     Tomatoes are cut into quarters, the seeds are removed ... then they are placed on a tray, marinated with olive oil, sugar to taste, salt, pepper, and Italian herbs and baked in the oven for 15 minutes until golden without losing its color ...
  2.     Take the Quinoa and cook for 15 minutes, after being soft strain it with a strainer and let it rest.
  3.     The zucchini is cut into wheels and placed in a hot grill pan until they are completely sealed, salt to taste, Italian pepper, and mixture, let stand 5 minutes ...
  4.     The onion is cut into rings, mixed with the flour until completely covered, then fried until golden...
